Today’s photo of the day is “My Oven Fried Catfish!”
When I started dating my husband yeeaaarrsss ago, I spent alot of time watching his mother cook. She taught me somethings I still do today, one of which is Oven Fried Catfish. If you still like the fried taste but without the grease, this is the way to go. Last week, I made this dish and took a picture for my friend who wanted to try Oven Fried Chicken. The process is the same. You can google different recipes, oven temps and methods. But after you do it often, it will just come natural!
Here’s a simple recipe:
Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
- In a shallow dish, stir together the cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper. Dip the catfish fillets in milk, then place them into the cornmeal mixture and coat liberally; place on the greased baking sheet. (Which I coat with Olive Oil) Coat the tops of the fillets with cooking spray until wet. (I have never done this, but you can if you like.)
- Bake for 15 minutes in the preheated oven, or until fish is easily flaked with a fork.
- *** I bake it a little longer than 15 minutes. At least until its looks and feels crunchy, and of course DONE.***
